Never Fail No-Bake Cookies

Just like it says - never fails.  This is a double batch.  You can halve it if necessary, but if your house is like mine, you may as well make the double.


Measure out 6 cups of quick cooking oats.  They have to be the quick cooking kind.  If you use regular rolled oats you'll end up with a gooey mess, which only works if you intend to eat straight out of the pot.  So just use the quick cooking kind.  Set the oats aside then measure out 1 cup of peanut butter. The cookies prefer the creamy kind, but if you like crunchy then go for crunchy - whatever floats your boat.  Set the peanut butter aside.

In a large non-stick pot add 4 cups of sugar and a scant 1/2 cup of cocoa.  If you like less chocolate, use less cocoa.  If you like more chocolate, use more. Mix the dry sugar and cocoa together.  Add 1 cup of milk.  Mix.  Add one stick of butter (the kind with salt already added).  While stirring constantly with a wooden or plastic spoon, heat this mixture to boiling.  Once it's boiling, boil for one full minute.  Remove from heat.

Add the peanut butter, 1-2 teaspoons of vanilla and a dash of salt.  Mix until the peanut butter is mostly incorporated (it can still be lumpy - those will work out).  Add the quick cooking oats.  Mix for maybe a minute or a little less.  Drop by tablespoons full onto wax paper.  Allow to cool.

Eat and enjoy!  If you're on a diet, just replace a meal with these.  You know you'll eat them anyway so there's no reason to add another meal to them.  Plus they're full of protein, antioxidants, fiber, and carbs.  I ate some for dinner this evening, and it was good! :D
